Friday meat





November isn't the best time to take photos - especially when working only with my iPhone. So, this Friday dinner comes from the archive.

I don't eat red meat every day and meat isn't something I would be graving very often. So, usually if I'm cooking only for myself, I like to put more money into vegetables instead of meat (which can be quite expensive, especially quality meat). But on Friday dinner, I eat meat quite often.

This recipe is originally from the Gloria's Food ja Wine -magazine but I modified the recipe a bit.

Tabbouleh with lamb meatballs // serves max 4  


2 1/2 dl bulgur 
4 small tomatoes
1 small cucumber
around 5 twigs of mint
around 5 twigs of coriander
1/2 dl olive oil 
juice of one small lemon
handful of almonds
salt and pepper

Cook bulgur and let it cool. Toast almonds in oven/pan. Mix everything: bulgur, oil, chopped tomatoes & cucumber, almonds, lemon and chopped herbs. 

500 g minced lamb meat (I mixed 250 g lamb and 250g beef)
1 shallot onion
1 garlic clove
hint of olive oil
1-2 teaspoons cumin seeds
2 twigs of coriander
hint of salt

Glaze chopped onion + garlic until they get soft. Add cumin seeds and glaze . Mix onion, garlic, cumin seeds, chopped herbs, spices and oil to the minced meat and and shape into meat balls. Fry in oil until they get nice color. But do not fry too long so they won't get dry!

Serve with turkish yoghurt (seasoned with salt and pepper) and mint leaves.

Tabbouleh ja kuminalla maustetut karitsapullat // korkeintaan 4 hengelle 


2 1/2 dl bulguria
4 pientä tomaattia
1 pieni kurkku 
noin viisi mintunoksaa 
noin viisi korianterinoksaa
1/2 oliiviöljyä
pienen sitruunan mehu
kourallinen manteleita
suolaa ja pippuria

Keitä bulgur ja jäähdytä. Paahda mantelit uunissa/pannulla. Sekoita kaikki ainekset: bulgur, öljy, pilkotut tomaatit & kurkku, mantelit, sitruuna ja mausteet. 

500g karitsanjauhelihaa (itse sekoitin puolet karitsaa, puolet nautaa)
1 salottisipuli
1 valkosipulinkynsi
hieman oliiviöljyä
1 tl kuminansiemeniä
2 korianterinoksaa
suolaa

Kuullota sipulia ja valkosipulia, kunnes ne ovat pehmeitä. Lisää kuminansiemenet pannulle loppuvaiheessa. Sekoita kaikki aineksiet lihaan ja muotoile pulliksi. Paista öljyssä, kunnes ne ovat saaneet hyvän värin. Mutta älä paista liian kauan, jotta lihapullat eivät kuivu!

Tarjoile turkkilaisen jogurtin (mausta suolalla ja pippurilla) ja mintun lehtien kera.
